Kandungan mineral tepung kulit dan jerami nangka (Artocarpus heterophyllus)

Peningkatan konsumsi buah nangka di Samarinda menyebabkan limbah kulit dan jerami nangka menumpuk. Salah satu penanganan limbah tersebut adalah dengan mengkonversinya menjadi tepung. Tujuan penelitian ini untuk menentukan kandungan mineral tepung kulit dan jerami nangka. Tepung ini dibuat dengan merendam irisan tipis daging kulit dan jerami nangka dalam larutan NaHSO3 100 ppm dengan rasio 6:10 (b/v) selama 4 jam. Kemudian dicuci dengan air dan dikeringkan menggunakan oven selama 16 jam pada suhu 60-70°C. Kulit dan jerami nangka kering dihaluskan dan diayak. Analisis kandungan mineral dilakukan menggunakan spektrofotometer serapan atom. Hasil peenelitian menunjukkan bahwa kandungan Na, Ca, K, Mg, P, Zn dan Fe tepung kulit dan jerami nangka secara berturut-turut adalah 0,138±0,014%, 0,543±0,140%, 1,005±0,293%, 0,198±0,000%, 0,007±0,003%, 0,003±0,001 ppm, dan 0,011±0,001 ppm.
